Given that I can find one... Can I use a simple "Y" adaptor out from the 8ohm tap with speaker cords to each?

you do know the difference between guitar cords and speaker cords right?

Yes... a pretty simple question but just wondering if anyone here is doing something similar.
I've come across the instrument cord but not a speaker y cable. Have you come across one anywhere?
Thinking this might need to be a custom job.

never heard of speaker wire Y cord. i think it would mess up ohm load-impedance etc.
my rule is one amp one cab-gives the most pristine, robust sound-it has never let me down.

There's no reason you couldn't make a splitter Y cord, just use robust jacks and wire a pair of mono females parallel into a mono male 1/4" phone jack use the 8 ohm tap and play away.
Not as "clean" and a little more effort than just switching the taps feeding your existing output jacks to 16 and 8 though.
