would it be possible to gut the power sections out of both of these amps and use them as preamp heads, running the preamp outs into a new stereo power amp (300+ watts per side) to drive two cabs in a biamp setup?

Anything's possible, but I wouldn't bother with major surgery.

I don't know about the 370, but I would be surprised if it didn't have the same setup as the concert...

Meaning, the concert has a power amp in jack in back.  Use the preamp out to the new power amp, and put a "shorting plug" in the power amp in jack to ground the input of the internal power amp.  A "shorting plug" is just a plug with the tip connected and soldered directly to the sleeve.

could I use a 1/4" patch cord (plugging one end of it into the power amp in and leaving the other end of the patch cord hanging free)? Or does it have to be a "grounding plug"?

You probably could... but the unterminated end would be picking up some sort of hum and noise (like when you haven't plugged in your instrument yet but the cord is plugged into the amp) and attempting to amplify it to some extent.  

Grounding the input is really best.
