Is the Sunn coliseum able to put out a 2 ohm load?

Yes. It came with 2 Vega 18" cabs that were 4 ohm each.

what about 0ne 4 ohm cab and one 8 ohm cab?

The amp won't have any problem with that load, but they aren't going to share power equally. You'll have to try it to find out if it sounds good to you.
